1. mix the dry ingredients in a large mixing bowl..
2. add the egg and mix well..
3. add the oil, vanilla essence and milk and mix well..
4. spoon the batter into small cups (I used my espresso mugs) and microwave for 30-40 seconds until done but still slightly runny..
5. serve with ice cream or whipped cream..
6. TIP: sprinkle chopped nuts of your choice on the mixture before putting cups in the microwave. OR add 5ml of instant coffee powder with the cocoa for a mocha flavour.
