Carrot cup cake step by step
- Crack the eggs in the mixing bowl.
- Beat lightly using a whisk or hand mixer.
- Add sugar whisk until fully mixed.
- Add the oil mix until fully mixed and vanilla essence and continue mixing until fully incorporated..
- Sift the flour, baking powder and nutmeg, and cinnamon. Add into the mixture folding gently.
- Add grated carrot, fold into the batter.
- Mix in the dried mixed fruit, folding the gently.
- Add the desiccated coconut.
- Using a large spoon scoop the mixture and pour into you muffin tins. pour in all the cups upto 3/4full.
- Place in a preheated oven at 180C. Use an oven thermometer.
- Bake the muffins/queen cakes for about 20mins. This will also depend on the size of the muffins.
- A small knife inserted at the center of the cake should come out clean.
- Set aside to cool completely.
