Peaches n Cream Cupcakes step by step
- Preheat oven 350deg.
- In medium bowl whisk together flour, baking powder & soda, and salt. In lrg bowl beat together sugar and butter until creamy. Beat in egg, vanilla extract & peach extract until mixture is smooth. Add half of flour mixture to butter mixture and stir until almost combined. Add buttermilk and peach puree and stir again until almost combined. Add rest of flour and stir until all ingredients are mixed in.
- Fill cupcake liners with batter. Bake 18-20 mins. Cool 10 mins before removing from pan. Place on wire rack until completely cooled..
- FOR FILLING: place small saucepan on stove on medium heat. Put peaches and sugar in and bring to slight boil. In seperate small bowl, mix cornstarch and 1tablespoon water until no lumps. Add cornstarch mixture to pan and keep on medium-low heat for about 1 min. Cool completely before use. YIELD: 1 1/2cups.
