Ingredients of Pumpkin Cupcake or Cake
- It's of Cupcake.
- Prepare 1 box of Pumpkin Bread & Muffin Mix.
- You need 2 of large Eggs.
- You need 1/2 cup of Vegetable Oil.
- You need 1 cup of Water.
- It's of Frost.
- You need 10 1/2 oz of Lemon Curd (Click on the search icon for more info ->).
- It's 8 oz of Mascarpone Cheese (or regular cream cheese).
Pumpkin Cupcake or Cake instructions
- Prepare the Pumpkin Bread & Muffin mix. I used Trader Joe's one, but you can use any from your local grocery store. Or, you can use any pumpkin bread recipe and do it from scratch..
- Mix water, eggs and oil together (that's what my bread mix says.). In this step you basically follow the instructions on your pumpkin bread mix..
- Add the bread & muffin mix.
- You can either bake it in a cake pan or use muffin / cupcakes pan. Spoon batter into well-greased and floured pan or paper lined muffin pan cups. Fill about 2/3 full..
- Bake at 400°F for about 18-20 min or until a wooden pick inserted in the center comes out clean. I reccomend to follow the instructions that your bread mix box says..
- While the cake/cup cakes are baking, prepare the frosting..
- Put Lemon Curd and Mascarpone together in a bowl and mix them well together..
- When the cake/cupcakes are ready, wait 30 minutes and frost it with the Lemon frosting you just prepared..
